Raw Carrot Cake Bliss Balls

Heya Everyone! I know, I know, it's been ages!! But I thought I'd break the hiatus by sharing a recipe, something I haven't done on here yet! I think it's safe to say I'm officially bliss ball obsessed; there's never not a time when my fridge doesn't have some new flavour combination sitting there waiting to be snacked on! I got this recipe from a friend who's almost as obsessed with bliss balls as I am, so here's my tweak on it, I hope you enjoy! The main ingredients are dates, raisins, coconut, a little bit of nutmeg and cinnamon, and of course, grated carrot. The original recipe calls for all the ingredients to be blitzed in a food processor, which I don't have, and a blender just doesn't seem to work the same. So I blitzed the raisins and soaked dates separately in my little nutri-ninja and then combined them with the rest of the ingredients in a mixing bowl! (I had to get my hands in there and squeeze and mash the mixture to incorporate the moisture through the batter). After I rolled the mixture into balls of cakey bliss, I tossed them in a scoop of Vanilla Complete, my favourite plant based protein powder! And I believe it was the finishing touch - like icing a carrot cake with cream cheese icing! Hit me up if you'd like a sample pack of Complete to try their goodness for yourself! These bliss balls have an amazing soft texture, and they really do taste like carrot cake batter! (Unless you get an unexpectedly large chunk of date or sultana!) Raw Carrot Cake Bliss Balls Ingredients: - 3/4 cup pitted dates - 1/2 cup raisins (or sultanas) - 1 3/4 cups desiccated coconut - 1 large carrot, grated - 1 tsp nutmeg - 1 tsp cinnamon - 1 serve Vanilla Complete Method: Soak dates in hot water for 5mins until soft - drain well. Blitz raisins and dates and add together with coconut, carrot and spices. Combine well. Set in fridge for 15mins before rolling/pressing into balls. Toss each ball in Vanilla Complete to finish. Enjoy!
